Quick and Super Tasty Breakfast Burritos

Mexican food has really made a strong comeback as of late and I am more than OK with this. Breakfast Burritos are all the rage and are so easy, quick and SUPER tasty. Having a really easy salsa or hot sauce laying around can really pack a punch in the mooring too. Mexican food is really all about the flavor and freshness of ingredients and I really think this is just the beginning for you (no pun intended).

Breakfast Burritos (makes about 2)


2 ea flour tortillas (8-12") (really whatever you have works fine)

4 ea eggs, scrambled 

4 oz oaxaca cheese, grated

1/2 ea avocado, sliced thin

1/2 bunch cilantro, chopped roughly

2 oz tomato salsa (recipe below)

salt and pepper


1 ea 28oz can tomatoes, crushed

1/2 bunch cilantro, stems are ok

1/2 ea yellow onion, chopped rough

1 ea jalapeno, seeded, chopped rough

1 ea lime, juiced

salt and pepper

before the fold


1. For the salsa, combine all ingredients in food processor and pulse until salsa looks awesome.

2. Heat Baking Steel Griddle on medium heat for 5 minutes.

3. Scramble eggs on top of griddle or in a pan if you don't trust yourself. Fold in cheese and cilantro. Set aside.

4. Lay tortillas down, place eggs on bottom of tortilla, layer avocado on its side and pour salsa on top.

5. Do the classic burrito fold (also known as the subway roll-up) and toast, seam side down on the griddle. Turn 180 degrees and get a little more color on the other side. 

6. Devour.
