Thug Kitchen Pancakes Cooked on a Baking Steel

Thug Kitchen Pancakes

At the Baking Steel Test Kitchen we are all about cooking like we give a f*#@, so we decided to take a page out of "Thug Kitchen" (the #1 selling vegan cookbook on Amazon), and create these amazing vegan pancakes.  The cookbook is a wickedly fun, must-read even if you don't "insert bad word here" cook.  As for the recipes? From what I've read so far, they are rock "beeping" solid.  I sh*t you not.  Anyway, on to the pancakes!

I used the Baking Steel Griddle for this one, but the original Baking Steel will also do.  The Steel distributes heat very evenly, more so than just about any product out there.  In other words, it's going to make "beeping" unbelievable pancakes!  One word of advice, don't over mix the damn batter. Or you're "fuuudgggedd"!!

Pancakes on Baking Steel Griddle

Whole Wheat Banana Pancakes

Recipe from Thug Kitchen

2 1/2 cups all-purpose flour

2 tablespoons brown or white sugar

1/2 teaspoon of salt

2 teaspoons of baking soda

2 cups of nondairy milk

1 small banana, mashed

Grapeseed oil or coconut oil for cooking the pancakes

Procedure (edited PG version)

1 In a big bowl, whisk together the flour, sugar, baking soda, and salt. Make a crater in the middle and add the milk and mashed up banana.  Mix that all together until there are no more dry spots, but don't go crazy. Mixing it too much will make your pancakes tough, so just chill out sir mix-a-lot.

2 Now, you probably know what do do once the batter is done, but in case this is your first time at the griddle, keep reading.  Lightly grease your Baking Steel or Baking Steel Griddle with some oil and pour some pancake batter onto the Griddle for each pancake you want.  Cook the first side about 2 minutes or until bubbles appear on top.  The bubbles mean your pancake has cooked through.  Flip and continue cooking the other side for the 1 to 2 minutes or until the pancake looks golden brown.
