Baking Steel is proud to support local business, farms and other practices. One farm that we have recently fell in love with is Four Star Farms out of Northfield, Massachusetts. The farm is sustainable and produces some really great products, from flours to grains, even hops! We love supporting the locals, especially with awesome products.
Andris and I ordered Bolted Glenn Bread Flour from Four Star Farms, we had no expectations. The website described the flour as, "a hard red spring wheat has a mild, wheaty flavor and high protein making for a strong dough for breads and rolls." We said hey, lets play around with it in different forms.
We made dinner rolls, buns, a killer pizza with the Baking Steel broiler technique. We even used the flour to make a nice large boule. The flavor was unlike any other, with nice rustic, earthy notes. The color was great, somewhere between a whole wheat and white bread flour. One difference we both noticed, the flour was more dense than our house bread flour but the results were still impressive.
