Steel These Fish Tacos

 

Turn fish tacos into a one pot meal with the Baking Steel Griddle...

The Best Damn Fish Tacos (serves enough)

Ingredients

3- 2oz portions of fresh sea bass (any flaky white fish will do)

3 ea corn tortillas (6")

1 tsp cumin

1 tsp chili powder

6 oz guacamole 

3 oz pico de gallo (recipe follows)

3 oz pickled red cabbage (recipe follows)

1/2 ea lime, cut into wedges

salt and pepper to taste

Pico De Gallo

2 ea tomatoes, core removed, small dice

1/2 ea small yellow onion, small dice

1/2 ea jalapeno, minced

1/4 bunch cilantro, chopped roughly

1/2 ea lime, juiced

salt and pepper to taste

Pickled Red Cabbage

1/4 head, red cabbage, shaved fine

1 oz sugar

1 oz salt

1/2 lime, juiced

1/4 bunch cilantro, chopped roughly

1/4 red onion, julienned

salt and pepper to taste

Procedure

1. Make pico de gallo, guacamole and pickled red cabbage ahead of time.

2. Preheat Baking Steel Griddle to medium heat for 5-6 minutes.

3. Season fish with oil, salt, pepper, chili powder and cumin.

4. Lay flesh side down on hot griddle and sear for 2-3 minutes depending on thickness.

5. Flip fish over and cook for additional 1-2 minutes.

6. Warm tortillas on griddle and place on plate.

7. Lay fish on top of tortilla, garnish with guacamole, salsa and cabbage.
