Sometimes, time is not our our side.  You need to feed the entire family, everyone wants pizza.  Mom and dad want arugula, one kid wants pepperoni, the other plain cheese. You get the picture. So, what can you do? Pan pizza for the entire family.  Big enough to feed a huge crowd, and versatile to satisfy everyone's tastes.

We're going to use our standard no knead pizza dough. This recipe typically yields 849 grams of dough which we then separate into four equal parts (213 grams each). This time, we won't divide up the batch. For a rectangular pan pizza, we will use about 750 Grams of dough. We will also oil the pan. The oil combined with the power of the Baking Steel will create a nice crisp bottom of the pie. Use that extra bit of dough and create these nice dinner rolls.

Procedure

Preheat your oven at 500 F, with the Baking Steel on the top shelf.

Prepare your ingredients.  You can divide the pan pizza into grids.  For this one, I made 3 different sections.  Let your imagination run wild.  But here is an important step.  Prepare all your toppings before you stretch out your dough.  For this one, I pre-sliced the pepperoni, shredded the low moisture mozzarella.  If you are using sauce, prepare it ahead of time.  Everything should be ready to load once the par bake is complete.

Stretch out your dough to fit the designated sheet tray, this one a standard half sheet try (18 x 13). Start in the center and press/push the dough outwards towards each corner.

Once the dough is ready, move the sheet tray on top of the Baking Steel and par bake the dough at 500 degrees.

Remove from oven after 6 minutes. Pull your pan out of the oven and go crazy. You can experiment with different flavors or stick to traditional cheese...it's totally up to you. Don't take too long adding the toppings, you want this masterpiece back in the oven ASAP.

Place the tray back in the oven on top of the Baking Steel, wait until it has reached your desired brownness.  I switched my oven to broil for the last minute of the bake....

It is as easy as that. Pizza for the entire family.
