After a late morning workout, my wife was hungry and looking for a snack. "Something hot," she said. Well, you don't need to ask me twice. Any reason to use my Mini Griddle is good enough for me-boom what? Time for lunch.
We had pizza class in the Baking Steel test kitchen last night, which means the fridge is stocked with leftover pizza sauce and fresh mozzarella cheese. So, we're "inventing" a new sandwich today - the grilled margherita pizza cheese sandwich. Ok, I'm sure someone else has made this before, (bread, sauce and cheese, who wouldn't?) but still, this is a personal invention and definite first, for me.
I choose a real soft, but crusty, Italian loaf for the base. After buttering the outer sides of the bread, I layered that up with tomato sauce, fresh mozzarella and basil. I tossed it on the Baking Steel Mini to grill - just like a typical grilled cheese. But trust me when I say, there is nothing typical about the taste of this sandwich! It's guaranteed to blow your mind.
Lunch is served my sweet!

Two slices of your favorite bread
75 grams fresh mozzarella thin slices
75 grams tomato sauce
1. Preheat your Mini on the stove top for about 5 minutes on medium heat.
2. Layer the sauce on one both slices of bread, then add fresh basil and sliced mozzarella to one slice and place the other slice sauce side down on top. Butter the outside of the bread, both slicess.
3. Place butter side down on your Mini Griddle and cook for about 3-4 minutes. Flip and repeat.
4. Slice and serve.
