With my beloved Patriots out of Super Bowl contention, I've turned my attention to the second most important ritual of today - the Super Bowl spread. Game day preparations are underway and my quest to create the best pizzas for Super Bowl Sunday is on.
Here's the line-up.
- Assess the Equipment: For today's food-spread smackdown, I plan to pull out The Big. At a 1/2" thick it bakes beautifully and at 30 lbs it is a heavy-duty player. The thicker the steel, the more heat energy is stored, decreasing the cooking time. With the Big, I'll be cranking out pie after pie - scoring a big win with my guests!
- Go local: New Orleans is known for its delicious Creole cuisine. Baking Steel pays homage by testing our first Gumbo Pizza. Spice up traditional tomato-based sauce by adding paprika, cayenne pepper and/or Louisiana-style hot sauce. Add some sliced andouille sausage, chopped okra, file' seasoned shrimp and top it off with a little grated low-moisture mozzarella. This recipe is hot, hot, hot!
- Walk Through Practice: Making your own dough takes practice. I've been experimenting a lot lately and find that making my dough 3 days ahead of time and giving it a cold ferment yields the best crust. If you don't have time, buy it in store at Trader Joe's or Whole Foods. Both have great options.
- Bring the Meat: Super Bowl is not a night to eat light. We need fan fuel. My plan is to create a meat-lovers pie by piling on pepperoni, sausage and pancetta to a traditional tomato sauce and topping it off with some smoked mozzarella.
