Taco Tuesday is a weekly thing at my house, sometimes even Taco Thursday if things get a little crazy! Come to find out, Breakfast Tacos are equally as awesome! Throw a fresh Corn Salsa on top and you'll be singing!
Breakfast Tacos with Corn Salsa
(Serves 2 humans)
4 ea corn tortillas
4 ea farm fresh eggs
2 ea ears of corn
4 oz red bell pepper, small dice
2 oz red onion, small dice
2 oz cilantro, chopped coarse
1/2 ea jalapeno, minced
1 ea lime, juiced
1 oz cotija cheese, grated
2 oz, green chile sauce
salt and pepper to taste
1. Preheat Baking Steel Griddle on medium. Char corn cobs. Set aside.
2. Cut corn kernels off the cob and mix with peppers, onion, cilantro, jalapeño and lime juice. Season with salt and pepper. Set aside.
3. Place 4 corn tortillas on back of griddle. Place oil on bottom half of griddle and crack eggs on top. Fry eggs until set.
4. Remove tortillas, top with fried eggs. Garnish with salsa, green chile sauce and cotija cheese.
