Happy St. Patrick's Day! We're thinking green and wishing for spring over at the test kitchen. Today, we're combining two of my absolute favorite foods-pizza and avocado! Sounds crazy, right?! But if you are a fan of "avocado toast" than you'll know that it's not crazy at all...it's delicious!
So, we are going to use our new favorite toy, the Baking Steel Skinny. This baby has been rocking our kitchen world-it's so versatile and so fun! We're using our 72-hour dough, and stretching it cracker-thin. Pre-heat your skinny on the stovetop to about 400F. That will give you the crispiness you crave when you throw that dough on top. Sear the dough for about 90 seconds per side. That's it-you're ready to top!
As I mentioned, we are topping this flatbread with Fresh Chef's crazy good avocado guacamole! This is a recipe you are going to want to make by the bucketful! The creaminess of the avocado pairs so nicely with the crunch of the crust. Add some jalapeño and fresh lime, boom what? It's a St. Patty's Day lunch you won't soon forget!
1 pizza dough
3 cups of fresh guacamole
1. Place your Skinny Griddle on the stove top and preheat for about 7-10 minutes.
2. Stretch out your pizza dough to about 1/4" thickness. Pour a little bit of olive oil down on your Skinny and then place your dough on top. Cook for 60-90 seconds, flip and repeat. Remove.
3. Distribute the guacamole all over the top, slice and serve.
